The 2014 Adaptation Cabernet Sauvignon by Odette redefines approachability. It offers notes of pomegranate, cherries, cranberry, and dried herbs with hints of cocoa beans and espresso to intertwine into one harmonious wine. It’s supported by a silky texture, fresh acidity, supple tannins, and a long lingering finish that leaves a long lasting impression across the palate. This is a beautiful showing of Cabernet Sauvignon in a truly magnificent vintage. Favorite food pairings are mature and hard cheese, venison, beef and lamb.
